    Ingredients  
    2 cans (14.5 ounces each) reduced-sodium chicken broth
    ½ cup nonalcoholic white wine
    ¼ teaspoon salt
    1 cup water
    2 teaspoons olive oil
    1 large leek, white part only, sliced
    1 bulb fennel, trimmed, cored, quartered, and thinly sliced
    1 cup Arborio rice
    ¾ pound medium shrimp, peeled and deveined
    1½ cups fresh or frozen peas
    ½ cup (2 ounces) grated Parmesan

    Directions

    1. In a medium saucepan, combine the broth, wine, salt, and water. Bring to a boil over high heat. Reduce the heat to low.
    2. Meanwhile, warm the oil in a Dutch oven over medium heat. Add the leek and fennel. Cook until the fennel starts to soften, 3 to 4 minutes. Add the rice. Cook, stirring, for 1 minute to coat the grains.
    3. Add about 1 cup of the broth mixture to the rice mixture. Cook, stirring constantly, until all the broth is absorbed, 5 minutes. Continue to cook, adding ½ cup of the broth mixture at a time and stirring frequently, until the rice is almost tender, 20 minutes.
    4. Add the shrimp and peas. Cook, stirring constantly, until the shrimp are opaque and the rice is tender, 5 minutes. Remove the risotto from the heat and top it with the Parmesan.

    Tip

    Arborio rice, a short-grained, high-starch rice appropriate for risotto, is sold in many supermarkets and Italian food stores.
